- 2 fillets salmon, 150g each, skin on
- 1 bunch fresh asparagus, tough ends trimmed
- 2 tbsp olive oil
- 1 tbsp Herbs: fresh dill, chopped
- 1 tbsp parsley, chopped
- 1 tsp fresh thyme
- 2 clove garlic, grated
- Zest of 1 lemon
- Salt and black pepper
- 1 tbsp Lemon caper sauce: butter
- 1 tbsp capers, roughly chopped
- 2 tbsp lemon juice
- 1 tsp fresh dill
- Lemon slices, for serving

👩🍳 Instructions
- 1 Pat the salmon dry with paper towels — this is the key to crispy skin
- 2 Mix the olive oil, herbs, garlic, lemon zest, salt, and pepper into a herb paste
- 3 Coat the salmon evenly with the herb paste
- 4 Preheat the oven broiler to 220°C (425°F) or heat a grill pan until very hot
- 5 Cook the salmon skin-side down first for 4-5 minutes until the skin is crispy and crunchy
- 6 Flip once and cook for another 3-4 minutes — the inside should still be a little pink, which is perfect
- 7 Meanwhile, blanch the asparagus in boiling salted water for 2 minutes, then drain
- 8 Sauté the asparagus briefly with a little oil and salt
- 9 For the sauce: melt the butter, add the capers and lemon juice, and stir for 1 minute
- 10 To plate: lay the asparagus as a base, place the salmon on top, drizzle with the caper sauce, and garnish with lemon slices
💡 Tips
• The key to crispy salmon skin: the skin must be completely dry before cooking, and the pan must be very hot
• Don't overcook the salmon — a center that's still slightly translucent is the sign of perfection
• Capers can be swapped for caper berries, or add zucchini for variety
