- 200g kerupuk gendar (rice crackers, soaked in hot water for 5 minutes)
- 5 beef meatballs, sliced
- 2 eggs
- 8 red bird's eye chilies
- 3 curly red chilies
- 5 clove garlic
- 4 shallots
- 1 tbsp oyster sauce
- 1 tsp salt
- 1/2 tsp granulated sugar
- 500ml water
- 2 tbsp cooking oil
- green onions, sliced
- onion crackers, for topping

👩🍳 Instructions
- 1 Blend or grind the bird's eye chilies, red chilies, garlic, and shallots until smooth (you can use a mortar and pestle or a blender).
- 2 Heat the oil and sauté the ground spice paste until fragrant and fully cooked.
- 3 Pour in the water, stir well, then bring to a boil.
- 4 Add the sliced meatballs and cook for 2 minutes.
- 5 Add the kerupuk gendar that has been soaked and drained.
- 6 Cook while stirring until the crackers turn chewy, about 3-4 minutes.
- 7 Add the eggs, stirring gently so some parts remain whole.
- 8 Season with oyster sauce, salt, and sugar.
- 9 Sprinkle with green onions and serve while hot.
💡 Tips
• Don't soak the crackers too long so they still have a chewy texture.
• Adjust the spice level by adding more or fewer bird's eye chilies.
• You can add toppings like sausage, chicken feet, macaroni, or flat rice noodles (kwetiau).
