👩🍳 Instructions
- 1 Heat the margarine in a non-stick pan over low-medium heat, and sauté the chopped onion until softened and fragrant.
- 2 Beat the eggs, season with salt and pepper, pour into the pan, and scramble until cooked through. Remove and set aside.
- 3 In the same pan, add the shredded chicken and stir briefly until warmed through and well seasoned, then remove from heat.
- 4 Mix the mayonnaise and ketchup together in a small bowl to make the spread sauce.
- 5 Briefly warm the tortillas in a dry pan (no oil) for 10-15 seconds on each side so they become soft and easy to roll.
- 6 Place a tortilla on a cutting board and spread a thin layer of the mayo-ketchup sauce in the center.
- 7 Arrange the lettuce, scrambled eggs, shredded chicken, grated carrot, and shredded cheese in the center of the tortilla.
- 8 Fold in the left and right sides of the tortilla, then roll tightly from the bottom up, like rolling a lumpia (spring roll).
- 9 Cut the wrap diagonally into two pieces for a nice presentation, then wrap it in plastic wrap or parchment paper before placing it in the lunch box.
💡 Tips
• Roll the tortilla as tightly as possible and wrap it in plastic wrap so the filling doesn't fall apart while being carried.
• You can substitute the chicken with smoked beef or minced meat for a flavor variation.
• To keep the tortilla from getting soggy by lunchtime, keep the sauce in a separate small container and spread it on right before eating.
• Store the wrap in a cooler bag if the weather is hot, so it stays fresh until lunchtime.
