👩🍳 Instructions
- 1 Clean the fish, remove the scales and innards, then rinse well and drain. Pat the surface of the fish dry with paper towels so the seasoning sticks better.
- 2 Make diagonal slits on both sides of the fish body so the seasoning soaks into the flesh.
- 3 Mix the olive oil, minced garlic, oregano, thyme, rosemary, paprika powder, salt, and black pepper in a small bowl until well combined.
- 4 Coat the entire surface of the fish, including the slits and the belly cavity, with the olive oil seasoning mixture, and let it sit for 15-20 minutes to absorb.
- 5 Preheat the oven to 200°C (about 400°F) for 10 minutes.
- 6 Line a baking sheet with aluminum foil or baking paper, arrange the sliced onion as a base, then place the fish on top.
- 7 Tuck lemon slices into the fish's belly cavity and on top of the slits in the body.
- 8 Scatter the cherry tomatoes and black olives around the fish on the baking sheet.
- 9 Bake the fish for 20-25 minutes, or until the flesh is cooked through, the skin is lightly browned, and a fragrant aroma fills the air.
- 10 Remove from the oven, sprinkle with fresh chopped parsley, and serve warm.
💡 Tips
• Choose truly fresh fish—look for clear eyes and firm flesh that springs back when pressed—so the baked result doesn't taste fishy.
• Don't skip letting the fish rest after coating it with the seasoning; this is key to letting the herb and lemon flavors fully soak in.
• If you don't have an oven, you can cook the fish in a non-stick pan over low-medium heat with the lid on, flipping occasionally until evenly cooked.
• Serve with a fresh vegetable salad or quinoa to complete a well-balanced Mediterranean-style diet menu.
