Mansaf (Jordanian Lamb with Yogurt Sauce)

- 1kg lamb, cut into large pieces (shoulder or leg)
- 2 onions, halved
- 400g plain full-fat yogurt
- 100g tahini
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp black pepper
- 1 tsp salt
- 3 tbsp ghee (clarified butter)
- 400g long-grain basmati rice
- 700 ml lamb stock
- Rice seasoning: cumin, turmeric, salt
- Toppings: toasted almonds, toasted pine nuts, fresh parsley
- Shrak or naan bread, for the base

๐ฉโ๐ณ Instructions
- 1 Simmer the lamb with the onions, cumin, pepper, and salt for 1.5โ2 hours until very tender
- 2 Strain the broth and set aside 500ml (about 2 cups)
- 3 Mix the yogurt with the tahini and turmeric, stirring until smooth
- 4 Stir the yogurt mixture into the remaining broth and cook over low heat, stirring constantly โ do not let it boil or curdle
- 5 Add the cooked lamb into the yogurt sauce and warm through together
- 6 Cook the basmati rice with lamb stock, turmeric, and cumin until tender and golden yellow
- 7 Arrange the shrak bread on a large serving platter
- 8 Mound the rice on top
- 9 Place the pieces of lamb over the rice
- 10 Pour the jameed yogurt sauce generously over the whole dish
- 11 Sprinkle with toasted almonds, pine nuts, and parsley
- 12 Serve grandly from the center of the table
๐ก Tips
โข The yogurt sauce must NOT come to a hard boil โ heat it gently while stirring constantly so it doesn't curdle
โข If genuine jameed is hard to find, a mixture of yogurt and tahini gets you quite close to the real flavor
โข Mansaf is a dish meant for sharing โ it's best served on one big platter and eaten together
