- 500g rice
- 5 pieces kluwek (black nut, flesh removed)
- 400ml thin coconut milk
- 3 leaves bay leaves
- 2 stalks lemongrass stalks, smashed
- 1 tsp salt
- 3 clove garlic, mashed to a paste
- 5 shallots, mashed to a paste
- For serving: Fried chicken
- Sambal (chili sauce)
- Kerupuk (crackers)
- Fresh raw vegetables (lalapan)

👩🍳 Instructions
- 1 Soak the kluwek flesh in warm water for 30 minutes.
- 2 Blend the kluwek together with the garlic and shallots until smooth.
- 3 Wash the rice and put it into the rice cooker.
- 4 Mix in the coconut milk, the blended kluwek paste, and the salt.
- 5 Stir well until the rice turns a dark color all over.
- 6 Place the bay leaves and lemongrass on top.
- 7 Cook as usual.
- 8 Once cooked, let it rest for 10 minutes.
- 9 Fluff gently and remove the bay leaves and lemongrass.
- 10 Serve with your choice of side dishes.
💡 Tips
• Choose kluwek with flesh that is still deep black and fragrant — avoid any that have gone moldy.
• Blend the kluwek until completely smooth so there are no lumps in the rice.
• Thin coconut milk alone is enough — thick coconut milk will make the rice too heavy.
• Nasi Kalong is most authentically enjoyed at nighttime.
