Homemade nuggets that are so much healthier than the instant kind! Real chicken meat mixed with grated carrots, shaped into cute bites, and fried until golden and crispy. The kids won't even realize they're eating vegetables! This recipe makes 15 nuggets — you can freeze them and fry them up anytime.

  • 250g chicken breast fillet, cut into small pieces
  • 1 stalk carrot, finely grated
  • 1 egg
  • 3 tbsp all-purpose flour
  • 2 tbsp cornstarch
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • Coating: 2 eggs, lightly beaten
  • 150g breadcrumbs (panko is crispier)
  • Oil for frying

  1. 1 Blend the chicken until smooth (or chop it very finely)
  2. 2 Mix the ground chicken with the grated carrot, egg, all-purpose flour, cornstarch, salt, pepper, and garlic powder
  3. 3 Stir until well combined and moldable
  4. 4 Take 1 tbsp of the mixture and shape it into an oval or flat round shape
  5. 5 Dip into the beaten egg
  6. 6 Roll in the breadcrumbs until fully coated
  7. 7 Repeat until all the mixture is used up
  8. 8 Fry in hot oil (170°C/340°F) over medium heat until golden, about 4-5 minutes

  10. 10 You can also freeze them raw and fry when needed

💡 Tips

• Don't blend the chicken too smooth — a bit of texture tastes better

• Squeeze out the liquid from the grated carrot first so the mixture isn't too soggy

• Can be frozen before frying — keeps for 2 weeks in the freezer

• For a healthier option, air-fry at 180°C/350°F for 12 minutes with no oil
