Fried Bread Pockets with Vegetable Ragout (Roti Goreng Isi Ragout Sayuran)

- 8 slices sandwich bread (crusts removed)
- 2 tbsp Ragout: margarin
- 2 tbsp all-purpose flour
- 250 ml milk
- 1 stalk carrot, diced small
- 50 g sweet corn kernels
- 50 g green beans, cut small
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp ground nutmeg
- 1 Coating: egg, beaten
- 100 g breadcrumbs
- Oil for frying

👩🍳 Instructions
- 1 Ragout: melt the margarine, add the flour, and stir quickly for 1 minute
- 2 Pour in the milk a little at a time while continuously stirring so it doesn't get lumpy
- 3 Add the carrot, corn, and green beans — cook until the vegetables are tender
- 4 Add the salt, pepper, and nutmeg — stir until the mixture thickens
- 5 Remove from heat and let cool until firm
- 6 Flatten the bread slices with a rolling pin until thin
- 7 Place 1 tbsp of ragout in the center
- 8 Cover with another slice of bread, press the edges with a fork to seal tightly
- 9 Dip into the beaten egg, then coat in breadcrumbs
- 10 Fry in medium-hot oil until golden brown on both sides
- 11 Drain, then cut diagonally
💡 Tips
• The bread needs to be pressed thin so it can be shaped and the edges stick together tightly
• The ragout must be completely cold and firm — if it's runny, it will leak out
• Press the edges of the bread with a fork several times so they don't open up while frying
• You can freeze them after coating with breadcrumbs — fry straight from frozen
