Plain sandwich bread gets transformed into super delicious fried bread pockets filled with vegetable ragout! The edges of the bread are pressed tight to form a pocket that's crispy on the outside and creamy on the inside. You can make a big batch of the vegetable ragout filling at once and store it in the fridge — in the morning, just fill, and fry for 3 minutes.

  • 8 slices sandwich bread (crusts removed)
  • 2 tbsp Ragout: margarin
  • 2 tbsp all-purpose flour
  • 250 ml milk
  • 1 stalk carrot, diced small
  • 50 g sweet corn kernels
  • 50 g green beans, cut small
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp ground nutmeg
  • 1 Coating: egg, beaten
  • 100 g breadcrumbs
  • Oil for frying

👩‍🍳 Instructions

  1. 1 Ragout: melt the margarine, add the flour, and stir quickly for 1 minute
  2. 2 Pour in the milk a little at a time while continuously stirring so it doesn't get lumpy
  3. 3 Add the carrot, corn, and green beans — cook until the vegetables are tender
  4. 4 Add the salt, pepper, and nutmeg — stir until the mixture thickens
  5. 5 Remove from heat and let cool until firm
  6. 6 Flatten the bread slices with a rolling pin until thin
  7. 7 Place 1 tbsp of ragout in the center
  8. 8 Cover with another slice of bread, press the edges with a fork to seal tightly
  9. 9 Dip into the beaten egg, then coat in breadcrumbs
  10. 10 Fry in medium-hot oil until golden brown on both sides
  11. 11 Drain, then cut diagonally

💡 Tips

• The bread needs to be pressed thin so it can be shaped and the edges stick together tightly

• The ragout must be completely cold and firm — if it's runny, it will leak out

• Press the edges of the bread with a fork several times so they don't open up while frying

• You can freeze them after coating with breadcrumbs — fry straight from frozen
