  • 3 tbsp sweetened condensed milk (optional)

  • 1 small stick cinnamon stick (optional)

  1. 1 Wash the ginger thoroughly, then briefly char it over a stovetop flame or grill until the skin is slightly blackened and fragrant. This makes the ginger flavor in the skoteng more aromatic and less sharp.

  3. 3 Bring water to a boil in a pot, then add the smashed ginger, lemongrass, pandan leaves, and cinnamon stick (if using). Simmer over medium heat for 15-20 minutes until the water turns slightly yellow and the ginger aroma is strong.
