- 250g tapioca/cassava starch
- 3 tbsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp ground pepper
- 150ml hot water
- 1 tbsp cooking oil (for the dough)
- Oil for frying
- Seasoning powder of choice: BBQ seasoning
- Balado (spicy chili) seasoning
- Cheese seasoning
- Seaweed seasoning
- Spicy lime leaf seasoning

👩🍳 Instructions
- 1 Mix together the tapioca starch, all-purpose flour, salt, garlic powder, and pepper
- 2 Pour in the hot water little by little while stirring with a spoon
- 3 Once slightly cooled, knead by hand until smooth and no longer sticky
- 4 Add 1 tbsp cooking oil and knead again until the dough is smooth
- 5 Take a small piece of dough and roll into balls about the size of a large marble (2-3cm/¾-1¼ inch in diameter)
- 6 Heat plenty of oil (340°F/170°C)
- 7 Fry the cimol over medium heat — don't start with high heat right away
- 8 Fry until puffed up, floating, and golden brown — about 5-7 minutes
- 9 Remove and drain briefly
- 10 While still hot, transfer to a container with a lid
- 11 Sprinkle in your seasoning of choice, close the container, and shake until the seasoning is evenly coated
- 12 Serve warm
💡 Tips
• The water needs to be really hot so the dough can come together properly — cold water will make the dough fall apart
• Fry over medium heat first so the cimol puffs up fully, then raise the heat at the end to make them crispy
• Sprinkle on the seasoning while the cimol is still hot so it sticks well
• Cimol tastes best eaten right away — once cooled they can deflate, so reheat them in an air fryer if needed
